《中式点心基础》共7个模块,每个模块分为若干个项目,每个项目又分为若干个任务,涉及技能操作层面的每一个任务都配有对应的操作视频,并以图解的方式详细展示中式点心基础操作的技法要点。本书编写的项目和任务均来自我国餐饮业点心部门实际的工作任务,内容覆盖中式点心制作必需的理论基础、基本手法和基本技法。
